Tabbouleh
Tabbouleh is a super healthy, super delicious salad, where the key is for everything to be chopped super fine. It only takes 5 ingredients and was so good I had it as a main for dinner instead of a side.
Recipe
Tabbouleh
1/4 cup bulgur wheat (soak in water for 10 minutes then rinse through until water runs clear)
4 firm medium tomatoes
Whole bunch parsley
3 spring onions
1 lemon
2 tbsp extra virgin olive oil
Salt and pepper to taste
Directions
Cover the bulgur wheat with boiling water in a bowl and cover with a plate for 20 minutes until it doubles in size and absorbs the water.
In the meantime, use a mezzaluna or sharp knife and finely chop the mint, parsley and spring onions. Chop and core the tomatoes getting rid of the juicy part.
Add the mint, parsley, onions, tomatoes and bulgur in a bowl. Zest and squeeze in the lemon, drizzle the olive oil and season with salt and pepper to taste. Adjust olive oil and lemon to taste.
Fluff up using 2 forks for easy mixing and serve as is or with lettuce cups!
